The ideal dish to take care of a glut

If your family is sick of courgettes, then this courgette scone recipe will be a lifesaver, courtesy of top seed breeders Burpee Europe, using its variety Sure Thing.

This nutrient-packed vegetable can be ready to harvest just 48 days from sowing. It really is a ‘sure thing’ because plants are parthenocarpic. This means they’re self-fertile and can bear fruit early in cool, cloudy conditions even when there are no bees or male flowers around. Its green, medium-sized fruits are long and very tasty, with a stronger flavour than most courgettes.

Courgette scones recipe

Makes about 12 small scones or 8 medium-sized ones.

  • 225g self-raising flour
  • 1 tsp baking powder
  • 50g butter
  • 2 courgettes (Sure Thing), grated and drained (to remove excess water)
  • 2 tbsp Parmesan cheese, grated (place some to the side for the top of scones before baking)
  • Fresh chives, chopped
  • 150ml milk
  • 1 egg yolk to egg wash the scones
  • Salt and cracked pepper
  • Pea shoots for garnish.

Courgette scones recipe method

  • Heat the oven to 200 °C.
  • In a bowl, place the flour, baking powder, salt and pepper. Add the butter and rub with your fingertips until it forms large breadcrumbs. Add the Parmesan cheese, the drained courgettes and chopped chives. Mix and pour in the milk using a fork to bring the mix together.
  • On a clean work surface, pour the dough and roll it until it is 2cm thick using a (fluted) cutter.
  • Place the courgette scones on a baking tray, brush with egg yolk, and top with grated Parmesan cheese.
  • Bake for 10-12 minutes or until risen and golden brown.

To serve: Place the freshly baked scones on a board with some smoked salmon, a jar of tomato chutney or butter.
This tasty and simple dish is perfect for lunch or afternoon tea in the garden.
